White Chocolate
Raspberry & White Chocolate Muffins
These Raspberry & White Chocolate Muffins are so quick and easy to make at home and taste just as good as coffee shop ones. Muffins are what I call a great value cake that is a meal in itself! Also great to share with your chums accompanied by an afternoon latte.
You can add all sorts of ingredients so you will never get bored of experimenting with different flavours. I love to add chocolate chips in mine as they add moistness to the muffin as well as making them taste great. I make these raspberry & white chocolate muffins with white chocolate, or just smash up a packet of milky bar buttons from your kids party bag (hey, you can give them a muffin in return!)
Frozen raspberries are ideal for this recipe because they are less likely to break up when they are mixed into the muffin batter.
This recipe is dedicated to my very special chum and yummy mummy Laura Harrison who is an enormous encouragement to me and also kindly helped me test this recipe – hey, it was very hard work all that munching!! Everyone who knows Laura will agree with me when I say that she has a huge heart, is incredibly thoughtful, generous and has the most hilarious sense of humour!

Makes 12 Raspberry & White Chocolate Muffins:
- 300g self raising flour
- 75g sugar
- 300ml milk
- 1 egg, beaten
- Few drops vanilla essence
- 80ml vegetable oil
- 100g raspberries
- 75g white choc chips
- Preheat the oven to 180 C / gas mark 5. Line a muffin tin with muffin cases.
- Mix the dry ingredients in one bowl and the wet ingredients in a jug. Make a well in the middle of the dry ingredients, pour in the wet ingredients and mix until combined. Don’t over mix – a few lumps won’t matter.
- Add the chocolate and raspberries and quickly mix in being careful not to break up the fruit. Spoon the mixture into the muffin cases so each is two thirds / three quarters full. Bake for around 20 minuites until golden and cooked through. Allow to cool on a wire rack and enjoy!
