Raw Chocolate Candy Recipe

recipe for candy called “honeycomb”?
an aussie in philippines and cannot find honey comb candy any where, it contains raw or brown sugar but cannot remember the rest or
quantities then baking soda or powder to make it fluff up – in aust. cadbury chocolate coats and calls it violet crumble
1 Cup Sugar (8oz)
3 Tablespoons Golden Syrup
3 Level teaspoons bicarbonate of Soda
Grease the inside of a cake tin, combine the sugar and golden syrup in a saucepan over low heat until dissolved (stirring constantly and begins to boil)
Leave on medium heat and cook until a small amount of the mixture makes a hard ball in a glass of cold water (about 12 minutes)
Remove from the heat and sprinkle the bicarbonate of soda over the mixture and stir with a wooden spoon, until the mixture is a pale even colour.
Tip it into a mould or a cake tin and don’t touch until its cold, then you can break it into pieces and dip into melted chocolate.
